baba ganoush

ingredients
2 large aubergines
1/2 a squeezed lemon
3 cloves of garlic, minced
2 tsp of tahini
3 tablespoons of virgin olive oil
1 tsp of cumin
pinch of salt
handful of fresh parsley

1. flame grill the aubergines on a gas stove until the skins are blackened

2. place them in the oven at 190 degrees and cook for 30 minutes till softened

3.  remove from the oven and scrape the flesh into a bowl, add the garlic, lemon juice, cumin, tahini, salt, parsley and olive oil and blend with a hand blender for 10 seconds.

4. serve with warm pitta bread
